Coconut and Cardamom Porridge

Here is the recipe for Coconut and Cardamom Porridge.

  • 50g whole rolled porridge oats

  • 3 bruised cardamom pods (or a half tsp of ground cardamom)

  • 200ml almond milk

  • 100ml water

  • 1 tbs desiccated coconut

  • Maple syrup, to taste

  • Toasted coconut and flaked almonds

  • Berries, or fruit of choice

  • Put the almond milk and water in a pot over a medium heat with the bashed cardamom and allow to infuse, simmering for five minutes, then put through a sieve.

  • Mix the oats, coconut and cardamom-infused milk, pour into the pot and cook over a medium heat for five minutes, stirring.

  • Serve at once, adding your toasted coconut and almonds and any fruit you may want. This is delicious with maple syrup.
